Authentic Cuban Pocillo

Equipment
- Stovetop espresso maker (Moka pot)
- Small glass or tacita
- Small spoon
Ingredients
- 2 tablespoons finely ground dark roast Cuban coffee
- 1-2 teaspoons white sugar (adjust to taste)
- 2-3 oz hot water
Instructions
- Add the finely ground coffee to the filter basket of a stovetop espresso maker (Moka pot).
- Fill the bottom chamber with hot water up to the valve.
- Assemble the Moka pot and place it on the stove over medium heat.
- While the coffee brews, add sugar to a small glass or tacita.
- When the first few drops of coffee start to come out, quickly add them to the sugar in the glass.
- Vigorously whip the sugar and coffee drops with a small spoon to create a creamy foam (espumita).
- Once all the coffee has brewed, pour it over the espumita in the glass.
- Stir gently to combine and serve immediately.
