Equipment

  • Cezve or small saucepan
  • Turkish coffee cups
  • Spoon

Ingredients

  • 2 tablespoons extra finely ground coffee (Turkish grind)
  • 2 cups cold water
  • Sugar to taste (optional)

Instructions

  1. Add cold water to the cezve (Turkish coffee pot).
  2. Add coffee and sugar (if using) to the water. Do not stir.
  3. Place the cezve on low heat and allow the coffee to slowly heat up.
  4. As the coffee warms, a thick foam will build up. Do not stir.
  5. When the foam has built up and the coffee is about to boil, remove from heat.
  6. Skim the foam off the top and divide it between two Turkish coffee cups.
  7. Return the cezve to the heat and allow it to come to a boil.
  8. Remove from heat and pour half into each cup, over the foam.
  9. Allow the coffee to sit for a few minutes so the grounds can settle before drinking.
