Ingredients
- 4 tablespoons medium-dark roast coffee beans, coarsely ground
- 16 oz hot water (200°F)
- 1 cup roasted butternut squash
- 1/4 cup plant-based milk
- 1 tablespoon maple syrup
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon ground nutmeg
- 1/8 teaspoon ground ginger
- Pinch of salt
Instructions
- Preheat oven to 400°F. Cut butternut squash into chunks and roast until tender, about 25-30 minutes
