Equipment

  • Pour-over dripper
  • Coffee filter
  • Coffee grinder
  • Kettle
  • Scale
  • Small saucepan

Ingredients

  • 30g medium-dark roast coffee beans
  • 500ml filtered water
  • 120ml red wine
  • 2 cinnamon sticks
  • 2 star anise pods
  • 4 whole cloves
  • 1 orange peel
  • 2 tablespoons honey (optional)

Instructions

  1. Heat water to 200°F (93°C)
  2. Place spices and orange peel in the bottom of your pour-over dripper
  3. Add freshly ground coffee on top of the spices
  4. Begin pour-over process with a 30-second bloom
  5. Continue pouring in circular motions until you reach 500ml
  6. Warm the red wine slightly (don't boil)
  7. Divide the coffee between two mugs
  8. Add 60ml warm red wine to each mug
  9. Stir in honey if desired and serve immediately
