- 15g medium-dark roast coffee beans
- 200ml hot water (195°F/90°C)
- 120ml coconut milk
- 1 stalk fresh lemongrass, bruised
- 1-inch piece fresh ginger, grated
- 1 tablespoon honey (optional)
- Pinch of sea salt
Instructions
- Grind coffee beans to a fine consistency
- In a small saucepan, warm coconut milk with bruised lemongrass and grated ginger. Simmer for 3 minutes
