Ingredients
- 4 tablespoons coarsely ground medium-dark roast coffee
- 2 ripe persimmons, peeled and pureed
- 1-inch piece fresh ginger, sliced
- 2 whole star anise pods
- 2 tablespoons honey
- 16 oz hot water (200°F)
- Pinch of salt
Instructions
- Combine sliced ginger, star anise, and honey with 1/4 cup hot water. Let steep for 5 minutes, then strain
- Add coarsely ground coffee to French press
- Pour hot water (200°F) over the grounds
- Steep for 4 minutes
- While coffee steeps, blend persimmon until smooth
- Press the plunger down slowly
