  • Paper filter
  • Coffee grinder

Ingredients

  • 20g medium-dark roast coffee beans
  • 300ml filtered water at 200°F
  • 1 medium sweet potato
  • 1/4 tsp ground cinnamon
  • 1/8 tsp ground nutmeg
  • Pinch of ground ginger
  • 1 tsp maple syrup (optional)

Instructions

  1. Preheat oven to 400°F (200°C)
  2. Wash and pierce sweet potato several times with a fork
  3. Roast sweet potato for 45 minutes or until very tender
  4. Remove skin and blend flesh with 2 tbsp hot water until smooth
  5. Grind coffee beans to medium-fine consistency
  6. Place filter in pour-over dripper and rinse with hot water
  7. Add ground coffee to filter
  8. Pour 50ml water in circular motion for blooming, wait 30 seconds
  9. Gradually add remaining water in circular motions
  10. Mix 2 tsp sweet potato puree with spices in serving cup
  11. Pour brewed coffee over sweet potato mixture
  12. Stir gently and add maple syrup if desired
