Ingredients

  • 2 oz (60ml) heavy cream
  • 1 tablespoon pure maple syrup
  • 30g fresh blackberries
  • 3-4 fresh sage leaves
  • 30g medium-dark roast coffee beans
  • 300ml filtered water at 200°F
  • Ice cubes

Instructions

  1. Whisk heavy cream with maple syrup until soft peaks form. Set aside.
  2. Gently muddle blackberries and 2 sage leaves in your serving glass.
  3. Grind coffee beans to medium-coarse consistency.
  4. Place filter in pour-over dripper and rinse with hot water.
  5. Add ground coffee to filter and level the bed.
  6. Pour hot water in circular motion, starting from center (60ml for bloom).
  7. After 30 seconds, continue pouring slowly until you reach 300ml.
  8. Fill glass with ice cubes.
