Ingredients

  • 20g medium-roast coffee beans
  • 300ml filtered water at 200°F
  • 2 tbsp cherry blossom syrup
  • 120ml heavy cream
  • 1/4 tsp pink food coloring (optional)
  • Pinch of salt

Instructions

  1. Grind coffee beans to medium-fine consistency
  2. Place filter in pour-over dripper and rinse with hot water
  3. Add ground coffee to filter and create a small well in the center
  4. Pour 60ml hot water in circular motion and let bloom for 30 seconds
  5. Gradually add remaining water in steady circular motions
  6. While coffee brews, whip heavy cream with 1 tbsp cherry blossom syrup and pink food coloring until soft peaks form
  7. Add remaining syrup to brewed coffee and stir
  8. Top with sakura cream and serve immediately
