- 350ml filtered water at 200°F
- 1 very ripe Fuyu persimmon, pureed
- 1/4 tsp ground cinnamon
- 1/8 tsp ground nutmeg
- 1/8 tsp ground ginger
- 120ml whole milk
- 1/4 tsp vanilla extract
- Extra cinnamon for dusting
Instructions
- Grind coffee beans to medium-fine consistency
- Place filter in pour over dripper and rinse with hot water
- Add ground coffee to filter and create a small well in the center
- Begin pour over process with 50ml water for blooming, wait 30 seconds
- Continue pouring water in circular motions until reaching 350ml total
- While coffee brews, blend persimmon with spices until smooth
- Heat milk and vanilla extract, then froth until foamy
- Add persimmon puree to brewed coffee and stir well
