- 200ml hot water (195-205°F)
- 2 tablespoons pumpkin puree
- 2 tablespoons unsalted butter
- 3 tablespoons brown sugar
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon ground nutmeg
- 1/8 teaspoon ground ginger
- Pinch of ground cloves
- 2 tablespoons heavy cream
- Pinch of salt
Instructions
- **Make the brown butter caramel:** Heat butter in a small saucepan until golden brown and fragrant. Add brown sugar and stir until melted. Add cream and salt, simmer for 2 minutes. Set aside.
- **Prepare the spice mix:** Combine cinnamon, nutmeg, ginger, and cloves in a small bowl.
- **Grind coffee beans** to a medium-fine consistency.
- **Set up your AeroPress** in the standard position with a pre-wet filter.
- **Add ground coffee** to the AeroPress and level the bed.
- **Mix pumpkin puree** with 30ml of hot water and spices until smooth.
- **Pour half the remaining water** (85ml) over the coffee grounds and stir gently.

- **Steep for 1:30**, then press slowly.
- **Stir in 2 tablespoons** of the brown butter caramel.
